My friend, Holden, aka Brisket King at Union Barbecue, came and visited me this week all the way from Charlotte, North Carolina. We went to college together at UNC and met taking a class called ‘Eats 101.’ Nearly 10 years later, he’s smoking meats for a living, and I’m playing with Cheez-Its. That’s that Carolina degree, baby!
