this shit rocks no. 53: crispy buffalo chicken snack wraps with ranch!
Plus cottage cheese and ceramics.
I have been riding the Cottage Cheese Train HARD these days. The CC Express, baby! When I was a kid, I used to make fun of my dad for eating a food that both looked and sounded foul. Now that I am a seasoned, wise adult, I can appreciate that cottage cheese is a superior grocery item. Sorry, pa!!!
My love of CC is not new. Remember when I built a shed with my dad yet somehow spent more time eating CC on toast than actually helping?
I have somehow made my way onto Cottage Cheese TikTok (it exists), and it is full of curds (heh) and wisdom. If the texture of it is a dealbreaker for you (can’t relate), I would highly recommend doing what this girl did and giving it a whirl in your blender. I am also getting a lot of great cottage cheese inspo from Toasted Table and fellow CC enthusiast, Cathryn.
This poignant TikTok delves into the hierarchy of CC brands, and the best one (and also most expensive) on the market is definitively Good Culture. That shit really rocks, and sadly this shit is not sponsored, but my god I wish it was.
Ink & Mud Co.
Something that you may or may not notice about my videos is that I mostly stick to the same few plates and bowls, all of which are hand-made by Claudia of Ink & Mud. This angel of a human so kindly sent me some ceramics after a previous newsletter where I mentioned that I don’t have East Fork pottery money (…I still don’t). All of her stuff has consistently made my food look way better over the last couple years and I am genuinely so grateful.
Sometimes I am jealous of my engaged/married friends who got to make a big list of items that their loved ones are morally obligated to purchase for them, but then I remember that they don’t have sweet angel Claudia who sent them plates and bowls, and I immediately feel better.

Crispy Buffalo Chicken Snack Wraps
Makes: 2 wraps
Active time: 35 minutes
Total time: 45 minutes
My favorite food to cook is a pan-fried cutlet. There is something so deeply simple and satisfying to me about crispy, breaded chicken (you could also sub pressed tofu planks). I will make any excuse to douse something in buffalo sauce, so this recipe is truly a marriage of my favs.
I am usually a blue cheese girl, but I was feeling more of a McD’s snack wrap vibe with this one, so I went the ranch route. If you don’t feel like making your own ranch, just use your favorite store bought one.
Wrapping up tortillas is genuinely so tricky and I usually need at least one warm up round. If you’re having trouble, make sure your tortilla is slightly warmed because they’re easier to fold and stretch (I microwaved mine for 10 seconds). You also may have overstuffed the tortilla (been there many times).
If you’re struggling to get it all wrapped up, then eat it like a taco instead of a sealed burrito and call it a day. I wrapped mine in the soft taco tortilla size, but if you’re looking for a bigger wrap, then get the burrito-size tortillas.
